Healthier Flaxseed Banana Bread

Yield:

one loaf

Ingredients

  • 3 ripe bananas
  • 1 teaspoon lemon juice
  • 1/3 cup milk (we used almond milk)
  • 2 eggs
  • 4 Tablespoons melted butter
  • 1/3 cup Truvia Baking Blend*
  • 1/4 cup light brown sugar *
  • 1/4 cup flaxseed meal
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • pinch salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups unbleached all purpose flour (or whole wheat)
  • old fashioned oats for sprinkling

Notes: Use less Baking Blend (1/4 cup) if you prefer a more naturally sweet-tasting bread. The brown sugar is optional, depending on the sweetness of your bananas.
